  • Semi-skimmed milk0.75× cup (165 ml)
  • Wheat flour, white, plain1× cup (140 g)
  • Eggs chicken1× portion (60 g)
  • Olive oil4× tablespoon (40 g)
  • Skyr, Icelandic yoghurt2× tablespoon (30 g)
  • Mayonnaise1× tablespoon (25 g)
  • Garlic1× clove (5 g)
  • Salt1.5× teaspoon (4.5 g)
  • Marjoram, dried1× teaspoon (3 g)
  • Oregano, fresh1× leaf (3 g)
  • Pepper, black1× pinch (1 g)

How to make Sauerkraut fritters with garlic sauce

  1. 1. Put the flour into a bowl, add the egg and milk. Blend into a smooth batter.

  2. 2. Squeeze the excess juice from the sauerkraut and chop it finely. Add it to the batter. Season with marjoram, salt and pepper.

  3. 3. Heat olive oil in a pan. Spoon the batter onto the pan to form fritters and fry on both sides until golden. Place them on kitchen paper to drain excess oil.

  4. 4. Mix the mayonnaise with the skyr. Add pressed garlic, oregano, salt and pepper to taste. Mix well.

  5. 5. Serve the fritters with the garlic sauce.v
