How to make Spelt Crêpes with Chanterelles and Oscypek Cheese

  1. 1. Place the flour in a bowl, add a pinch of salt, eggs, and one-third of the milk. Mix thoroughly with a whisk or mixer. Gradually add the rest of the milk while stirring. Finally, add melted butter and mix into a smooth batter. Cover with a cloth and let rest for at least 30 minutes..

  2. 2. When the batter is ready, heat a pan well. Pour a portion of batter onto the pan, spread evenly, and fry on both sides. Repeat with all the batter.

  3. 3. Meanwhile, prepare the filling. Chop the onion and parsley. Wash and dry the chanterelles with paper towels. Dice the Oscypek.

  4. 4. Heat olive oil in a pan and sauté the chanterelles with the onion.

  5. 5. Once the onion is translucent and the mushrooms are sautéed, add the cream and Oscypek. Mix and season with salt and pepper. Cook for about 2 minutes.

  6. 6. Fold the crêpes into triangles and pour the creamy chanterelle and Oscypek sauce on top.

  7. 7. Serve sprinkled with fresh chopped parsley.
