  • Smoked tofu1× package (200 g)

  • Olive oil2× tablespoon (20 g)
  • Parsley, fresh2× tablespoon (12 g)

  • Bay leaf, dried2× leaf (4 g)
  • Marjoram, dried2× pinch (4 g)
  • Allspice, ground1× teaspoon (3 g)

How to make Vegan Breton Beans

  1. 1. Cut the tofu into medium-sized cubes and fry them in a hot dry pan until lightly browned and the water evaporates. Once done, remove the tofu from the pan and set it aside.

  2. 2. Slice the garlic thinly. Fry it in olive oil on the same pan with allspice and a bay leaf.

  3. 3. Add the tomatoes, drained beans, water, and tofu to the pan. Season with marjoram, salt, and pepper. Let it simmer on low heat for about an hour, stirring occasionally.

  4. 4. After this time, taste the beans and season again if necessary. If the beans are too runny, continue cooking them on low heat for another 30 minutes to reduce.

  5. 5. Garnish the beans with chopped parsley.

  6. 6. Serve with rye bread.
