  • Lemon6× piece (480 g)
  • Raspberries0.5× cup (65 g)
  • Sugar-free vanilla pudding, instant1× package (35 g)
  • Erythritol3× tablespoon (30 g)

How to make Vegan Lemon Pudding

  1. 1. Cut the lemons in half and squeeze out the juice.

  2. 2. In a saucepan, bring the lemon juice to a boil. Add the erythritol and stir.

  3. 3. In a separate bowl, mix the almond drink with the pudding powder.

  4. 4. Pour the pudding mixture into the heated lemon juice, stirring vigorously all the time. Cook until it thickens (do not stop stirring).

  5. 5. Pour the ready pudding into dessert glasses or bowls. Place in the fridge for an hour.

  6. 6. Serve decorated with fresh raspberries.
